The community of Atchison welcomed new investors this summer, when Colorado natives Mike and Nora McCory opened up a new ice cream parlor: Lickity Split.
A New Local Business
Located on Commercial Street – across from the YMCA – Lickity Split welcomed its first customers on Aug. 4. The business owners set up shop in the old BBQ restaurant after taking note that the only other place to get a cold treat on a cone had recently closed.
“Every town needs an ice cream shop,” said Mike McCory. “We wanted to create an atmosphere where students can come and study and hang out and families can bring in their children to enjoy some ice cream.”
The couple hosts private events as well as give discounts to businesses, churches and schools that come in with a larger number of people.
With 16 flavors of ice cream as well as coffee and hotdogs, Lickity Split owners hope to satisfy almost every pallet, like that of customer Abigail Peyerl.
“I’m not typically someone who goes out and eats ice cream,” Peyerl said. “However, the salted caramel flavor had me hooked and I definitely will go back again for that.”
Owners Hope to Expound on Menu Options in the Future
In the future, Mike and Nora want to expand the menu to include sandwiches and hot cocoa when the temperatures start to cool down a bit.
With COVID-19 being a big fear among students and locals, the owners are always making sure to keep the shop as clean as possible.
“You will constantly see people wiping tables, the tops of chairs, the chairs outside it’s just the way the staff and I are,” McCory said.
The tables are set up to social distance and customers also have the option to take their ice cream outside.
